TOOLS FOR THE EVALUATION OF THE SUSTAINABILITY: A RELATING ONE IN THE HOTEL IBEROSTAR CENTRAL PARK, OF THE DESTINATION CUBA

Abstract

RESUMEN: Iberostar, un grupo hotelero reconocido por su liderazgo en la sostenibilidad, ha sido pionero en la introducción de sistemas internacionales de certificación de sostenibilidad en sus hoteles. El Hotel Iberostar Parque Central, uno de los más emblemáticos de La Habana Vieja, es un ejemplo de ello. A pesar de no haber obtenido la certificación, sigue prácticas sostenibles alineadas con la filosofía de la cadena. Por lo tanto, Iberostar necesita comprender el estado actual de sostenibilidad del hotel para evaluar la futura aplicación de Earth Check. Esta investigación tiene como objetivo general evaluar los indicadores de sostenibilidad turística en el Hotel Iberostar Parque Central durante el período 2023-2025. Para ello, se utilizaron varios métodos y herramientas, incluyendo el análisis bibliográfico, el análisis documental, las entrevistas, la observación participante y el análisis-síntesis. Los resultados de la investigación incluyen un análisis de la evolución del concepto de sostenibilidad y su aplicación al turismo, así como una revisión de las herramientas utilizadas para evaluarla. También se realizó una comparación entre diferentes metodologías y se aplicó una de ellas al hotel objeto de estudio para evaluar su comportamiento. Finalmente, la investigación proporciona recomendaciones para la futura aplicación del sistema de certificación Earth Check en el Hotel Iberostar Parque Central. ABSTRACT: Iberostar, a hotel group recognized for its leadership in sustainability, has been a pioneer in introducing international sustainability certification systems across its hotels. The Iberostar Parque Central Hotel, one of the most emblematic hotels in Old Havana, is an example of this approach. Although it has not yet obtained certification, the hotel follows sustainable practices aligned with the philosophy of the hotel chain. Therefore, Iberostar needs to understand the hotel’s current sustainability performance in order to assess the potential future implementation of EarthCheck. The general objective of this research is to evaluate tourism sustainability indicators at the Iberostar Parque Central Hotel during the 2023–2025 period. To this end, several methods and tools were used, including literature review, document analysis, interviews, participant observation, and analysis–synthesis. The results of the research include an analysis of the evolution of the concept of sustainability and its application to tourism, as well as a review of the tools used to assess it. A comparison of different methodologies was also conducted, and one of them was applied to the hotel under study in order to evaluate its sustainability performance. Finally, the research provides recommendations for the future implementation of the EarthCheck certification system at the Iberostar Parque Central Hotel.
